Red Thai Curry; Meatless Monday!

This is one of favorite recipes, I can literally drink this sauce it’s so yummy! You can make this vegan or not, whatever is best for you. 

Red Thai Curry

Curry Sauce:
1 tablespoon fish sauce
1 tablespoon peanut butter or sunflower butter
One and a half tablespoons of brown sugar
2 teaspoons soy sauce or tamari
1 can of Unsweetened coconut milk
2 tablespoons red curry paste

Veggies/ Protein:
Coconut oil as needed
Chicken (sliced thinly) , tofu (cubed), or Garbanzo beans
Half of a white onion sliced 🧅
One can of sliced water chestnuts drained and rinsed
Bag of frozen stir fry veggies
2 cups fresh Spinach or bok choy
Minced garlic 🧄

And of course any kind of rice or quinoa!

Mix all sauce ingredients in a sauce pan and simmer on low. Cook rice/ quinoa According to package. 

Heat a teaspoon of coconut oil in pan and cook tofu or chicken until browned. Remove protein from pan And sauté onion in more 🥥 coconut oil until soft. Add all the other vegetables to the pan and cook until done/ fork tender. 

Find a pretty Asian looking bowl in your cabinet and fill with rice then top with meat (tofu or beans) veggies and ladle sauce over the top as desired. Enjoy!!!
